December Cake of the Month: Strawberry Shortcake

A popular dessert, strawberry shortcake is produced from shortcake, a sweetened biscuit-like cake leavened with baking soda and powder. An ideal holiday dessert, its macerated sweet strawberries, and freshly whipped cream are placed on top of the shortcake. Strawberry shortcakes can also be served with ice cream in place of whipped cream.

Some early versions of strawberry shortcake recipes used crumbled pie crust in lieu of shortcake. This was replaced by shortcakes, which are still commonly used in contemporary strawberry shortcakes. For the Manila Hotel’s version, we used honey sponge cake instead.
